Best Summer Drink

The pride and joy of Punjabi cuisine - the mighty Patiala-peg lassi, is probably one of the most loved beverages during the sweltering Indian summer. Smooth and creamy, the yoghurt-based refreshment , traditionally served in earthen pots called matkas, has miraculous powers that can cool you instantly, and is probably the reason why even in Ayurveda, it is considered to be a great summer cooler.

Ingredients Of Lassi

  • 750 gm yoghurt
  • 50 gm ice cubes
  • Salt or sugar
  • 200 ml water

How to Make Lassi -

  1. Crush the ice cubes in a blender.
  2. Add the yoghurt, water, salt or sugar.
  3. Blend for about 1 minute.
  4. Serve chilled.
  5. If you are making a namkeen lassi you can add masala like bhuna jeera and kala namak and as desired.

A2 Milk vs Ordinary Milk1

Milk is a great source of calcium and protein. Casein is the largest group of proteins found in milk which makes up about 80% of the total protein content. A2 cows are the earlier breeds of cows like the desi Indian cows or the African cows that produce this protein in their milk along with an amino acid called Proline. In the new hybrid breeds, the proline amino acid got converted to Histidine due to alteration of genes over the years. These are the A1 cows that include breeds like Holstein, Friesian and Ayrshire. Stay with me.

Proline is strongly bonded to a small protein called BCM 7, which prevents it from getting into the milk produced by A2 cows. On the other hand, Histidine holds a weak bond with BCM 7, so it is easily released in the GI tract of animals and can enter the human body on consumption of milk from A1 cows and interact with the digestive system and internal organs.

                                                      A2 milk with the good quality protein but it has been conveniently replaced by the high-yielding cross breed, popularly known as HF or Holstein Friesian in India which provides the A1 variety of milk. This is something you need to consider beyond the 'type' of milk.”

1. It Has a High Smoke Point

The smoke point is the temperature at which an oil begins to burn and smoke. Not only does heating a cooking fat above its smoke point put it at a greater risk of hitting its flash point and causing a fire, but it also breaks down important phytonutrients and causes the fat to oxidize and form harmful free radicals.

Unfortunately, most cooking oils with a high smoke point are less-than-stellar for your health. Canola oil, peanut oil, corn oil and soybean oil are usually genetically modified and also often partially hydrogenated to increase their stability.

Ghee, on the other hand, is an excellent choice for cooking because of its high smoke point and beneficial effects on health. The smoke point of ghee is 485 degrees Fahrenheit, which is much higher than the smoke point of butter at 350 degrees Fahrenheit. Besides, researchers have also discovered that cows on organic dairy farms are healthier and less stressed than conventional cows, largely thanks to a more natural, forage-based diet instead of the grain and ground-up bones that usually pass as cattle feed on factory farms. Further, studies in the same line have shown that cows on healthier, forage-based diets produce far less waste than those on conventional dairy farms, and as a result, most organic farms reduce manure methane emissions by 60-80%, thus, contributing to a healthy environment for both, the Indian Cows and human beings
